raw broccoli salad

Serves 4

This is a variation on a Thermomix classic to make it dairy free. Love this recipe for its speed and healthiness.


Poppy cooks...


  1. Place
    250g broccoli, cut into florets,
    100g carrot, cut into pieces,
    95g apple, quartered,
    1/4 red onion,
    100g coconut yoghurt,
    1/2  lemon, juiced,
    pinch of celtic sea salt + cracked black pepper and chop 8 seconds / speed 4.

  2. Scrape down sides of bowl and chop 3 seconds / speed 4.

moroccan roast salad

Serves 2



Poppy cooks...


  1. Preheat oven to 190ÂșC.

  2. Place
    5 carrots, sliced into discs,
    1.5 tablespoons raw honey,
    1 tablespoon olive oil and
    pinch of celtic sea salt on a baking tray and bake for 30 minutes or until slightly caramelised.

  3. In a freezer bag marinade chicken by combining
    500g chicken tenderloins,
    2 teaspoons ground sweet paprika,
    2 teaspoons ground coriander,
    2 teaspoons olive oil and
    pinch of celtic sea salt + cracked black pepper.

  4. While carrots are still baking, make salsa verde by blending
    handful parsley,
    1/4 lemon, juiced,
    1.5 tablespoons olive oil,
    1.5 tablespoons filtered water,
    pinch of celtic sea salt + cracked black pepper in a small blender to ensure a smooth consistency.
  5. Once the carrots are cooked, combine with
    two large handfuls of spinach,
    2 sprigs of parsley, minced,
    1/4 lemon, juiced.

  6. Pan fry chicken until cooked, adding a little olive oil if necessary.

  7. Serve carrot salad, place sliced or shredded chicken on top, then sprinkle
    2 teaspoons currants and
    2 teaspoons pepitas over each serve and drizzle with salsa verde.

crispy skin salmon with a dill, cucumber + celery salad

Serves 2



Poppy cooks…
  1. In a bowl combine
    4 tablespoons coconut yoghurt,
    1 tablespoon dill, roughly chopped,
    garlic clove, minced,
    2 teaspoons rice wine vinegar,
    1/2 teaspoon coconut sugar,
    1/2 teaspoon celtic sea salt and
    1/4 teaspoon cracked black pepper.

  2. Add
    lebanese cucumber, finely sliced and
    2 celery sticks, finely sliced and toss to combine.
  3. Place salad in the refrigerator and cook
    2 salmon fillets in a non-stick frying pan, skin side down first.

blueberry muffin top cookies

Makes approximately 30 cookies

My husband was very accurate in describing these cookies as tasting like muffin tops! They aren't your usual crunchy cookie but soft just like the best part of any blueberry muffin. The brand of coconut yoghurt and gluten free flour you use will impact on the texture of the cookies, but regardless, they are yum.


Poppy bakes...

  1. Preheat oven to 190°C and line baking tray with baking paper

  2. Using a spatula, mix together
    1 cup coconut sugar
    and 
    1.5 cups coconut yoghurt.

  3. Add
    1 egg and
    1 teaspoon vanilla essence and mix together, then set aside.

  4. Stir together
    2 cups gluten free plain flour,
    2 teaspoons baking powder and
    1/2 teaspoon celtic sea salt.

  5. Add wet ingredients to dry and fold together.

  6. Gently fold in
    1 punnet / 1 cup blueberries.

  7. Spoon desired sized mounds on to baking paper with adequate space in between and bake for 10-20 minutes or until golden.

  8. Cool cookies on a wire rack before eating.


For an energy boosting snack, team these cookies with a glass of coconut water

Notes
These cookies are beautifully soft with a slightly chewy texture, so be sure to carefully lift them off the baking tray using a flat spatula when placing them on a wire rack to cool.

gluten-free pizza


Serves 1
Ingredients
gluten-free pizza base
organic + sugar free tomato paste
Topping suggestions
sliced onion, caramelised
garlic
avocado
roast pumpkin
roast capsicum
grilled eggplant
zucchini
olives
herbs (fresh or dried)
coconut yoghurt


Method
  1. Spread tomato paste over pizza base
  2. Add desired toppings
  3. Bake in oven and drizzle with coconut yoghurt before serving

Notes
There are a variety of gluten free pizza bases available on the market - I quite like Bodhi Bakeries Wheat Free Pizza Bases available online which I find serve 1 person per pizza base.

This is a great option for a quick lunch, of for those nights you don't feel like cooking. It is also a great way of using up any left-over vegetables in your fridge. Be creative with your flavour combinations!
