Ingredients
red onion, dicedbroccoli, cut into small florets2 zucchini, slicedceltic sea salt + cracked black peppercrushed chilli flakeshot filtered water1/2 cup rice milk4 free-range organic eggsground nutmeghandful basil, chopped
- Saute onions in a frying pan with olive oil until softened
- Add broccoli and zucchini, season lightly and add a pinch of crushed chilli flakes to taste. Add a dash of hot filtered water to the pan to soften the vegetables, and add more as necessary
- In a separate bowl, whisk together milk, eggs, pinch of celtic sea salt and a pinch of ground nutmeg until fluffy
- Stir basil through egg mixture
- When vegetables are softened and slightly browned, place in a baking dish and pour egg mixture over the top
- Bake in a 180°C oven for about 30 minutes
