salmon + potato rosti

Makes 24




Another great recipe for kids and adults!

Poppy cooks...
  1. In a non-stick frying pan with
    coconut oil, saute
    onion, finely diced and
    2 purple/red potatoes, grated with excess moisture squeezed out, and then allow to cool in a mixing bowl.

  2. While the above is cooling, make the optional avocado sauce by blending
    avocado,
    1/8 cup olive oil,
    1/4 cup filtered water,
    couple sprigs of coriander, finely chopped,
    1/2 lime, juiced and
    celtic sea salt, to taste. I then pour it into a squeeze bottle and place in the fridge.

  3. Returning to the rosti, combine potato mixture with
    200g tin salmon,
    1 egg and
    2 tablespoons gluten free plain flour.

  4. Press into patties of your preferred size (I use a cookie cutter to get all of them to be the exact same time) and fry in batches with a little
    coconut oil
    until golden.

  5. To serve, I squeeze a dollop of the avocado sauce onto each rosti.

kedgeree

Serves 6



Poppy cooks...


  1. Soak
    1 cup puy lentils for at least an hour, then drain.

  2. In a saucepan, boil
    4 eggs with
    2 fillets salmon in a steamer insert above. Once the salmon is cooked through, flake; and once the eggs are cooked, cut into quarters; then set all aside.

  3. Saute
    2 onions, sliced to your desired level of caramelisation, then set aside.

  4. Melt
    2 tablespoons coconut oil in a large pan, then add
    1.5 cups basmati rice, lentils,
    2 bay leaves,
    4 garlic cloves, minced,
    knob of ginger, grated,
    sprinkle of chilli powder to your liking,
    1 teaspoon ground turmeric,
    2 teaspoons ground cumin,
    2 teaspoons ground coriander and stir until fragrant.

  5. Add
    3 cups filtered water and bring to the boil then reduce heat to low and cover, cooking until the rice and lentils are done.

  6. Stir through
    bag spinach, then add fish, eggs, onions and
    bunch parsley, chopped.

  7. Serve with a
    wedge of lemon.

trout + goat cheese pasta

Serves 2

  1. Bring a saucepan of water to the boil and prepare a steamer by lining with wet baking paper and then placing a
    coral trout fillet on top of the baking paper (salmon can also be used as well).
  2. Once the water comes to the boil, add
    125g buckwheat pasta and place the steamer insert on top with fish.
  3. Once fish is cooked and flakes apart, remove and flake the fillet then set aside.
  4. Once the pasta is cooked, drain and rinse with warm water.
  5. Return pasta to the saucepan and add
    2 egg yolks,
    1/4 lemon, zest and juice,
    pinch of celtic sea salt and cracked black pepper.

  6. Saute
    2 handfuls baby spinach.
  7. Gently stir through spinach, flaked trout,
    2 tablespoons chives, chopped,
    2 teaspoons salted baby capers, rinsed and
    2 tablespoons olive oil into pasta.
  8. Garnish with
    60g goat cheese, crumbled.

crispy skin salmon with a dill, cucumber + celery salad

Serves 2



Poppy cooks…
  1. In a bowl combine
    4 tablespoons coconut yoghurt,
    1 tablespoon dill, roughly chopped,
    garlic clove, minced,
    2 teaspoons rice wine vinegar,
    1/2 teaspoon coconut sugar,
    1/2 teaspoon celtic sea salt and
    1/4 teaspoon cracked black pepper.

  2. Add
    lebanese cucumber, finely sliced and
    2 celery sticks, finely sliced and toss to combine.
  3. Place salad in the refrigerator and cook
    2 salmon fillets in a non-stick frying pan, skin side down first.

asian style salmon

Serves 2

A super easy Asian dish that you can easily multiply depending on how many serves you want to make. 



Poppy cooks…
  1. Line a baking dish with foil and place
    2 salmon fillets
    , skin side down, in the baking dish.

  2. Cover the fish with
    2 spring onions, diagonally sliced,
    1 red chilli, deseeded and finely sliced,
    2 garlic cloves, minced,
    knob of ginger, minced, and
    2 teaspoons sesame seeds.

  3. Pour juice of
    1/4 lime
    ,
    1.5 tablespoons tamari sauce
     and
    1 tablespoon coconut amino sauce
     over the ingredients.

  4. Cover and bake in a 180˚C oven for 25 minutes.

  5. While the fish is in the oven cook
    1 cup jasmine rice in a rice cooker, with a bunch of
    asian greens, chopped in the steamer tray.

  6. Plate up rice, followed by greens, place salmon fillet on top, drizzle remaining sauce over the whole dish and garnish with fresh
    coriander.

salmon with a summer salsa

Serves 4


Ingredients
1/4 red onion, finely diced
green chilli, seeds removed and finely diced
red capsicum, finely diced
mango, cubed
avocado, cubed
lemon juice
4 potatoes, cubed
hot filtered water
celtic sea salt
nuttelex
4 salmon fillets


Method
  1. Toss red onion, chilli, capsicum, mango, avocado and a squeeze of lemon juice together in a salad bowl and set aside
  2. In a pot, add potato with enough water to immerse potato. Cook until tender, drain and mash
  3. Add nuttelex and salt to mashed potatoes to taste
  4. Cook salmon skin side down first until crispy, then turn over until cooked through
  5. Divide mashed potato amongst serving plates, place salmon fillets on top followed by salsa. Garnish with micro herbs

Notes
This is a perfect dish for the warmer months. For a lighter meal, you can omit the mashed potato. Another alternative is to swap the mashed potato for mashed cauliflower.
