lasagne

Serves 4


This is a favourite of mine and Ella and is a family crowd pleaser. I love this reduced dairy version as we seem to be able to tolerate ghee and cheese in small doses.


Poppy cooks...


  1. In a large pot add
    onion, diced,
    3 cloves of garlic, minced,
    1/2 teaspoon dried basil,
    1 teaspoon dried oregano,
    1/2 teaspoon dried rosemary,
    400g tin diced tomato,
    carrot, diced,
    3 celery stalks, diced,
    1/2 zucchini, diced,
    red capsicum, diced,
    500g mince (beef, pork, chicken, lamb or turkey),
    6 button mushrooms, sliced,
    100g tomato paste,
    1 teaspoon apple cider vinegar,
    1 teaspoon honey,
    1.5 teaspoons celtic sea salt,
    pepper to taste with
    2 tablespoons ghee, cooking on medium heat for about 20 minutes, stirring occasionally.

  2. In a small saucepan add
    750g rice milk,
    3 eggs,
    45g ghee,
    1.5 teaspoon dried onion powder,
    1.5 teaspoon garlic powder,
    0.75 teaspoon honey,
    1.5 teaspoon celtic sea salt and
    55g tapioca flour, stirring with a whisk until it thickens.

  3. Preheat oven to 180ºC.

  4. Grease a large lasagne dish with ghee and cover bottom with some of the bolognese sauce.

  5. Place a layer of
    gluten free lasagne sheets on bottom of dish (I soak mine in water for just a few seconds to stop them curling), cover with half the bolognese sauce and a third of the white sauce.

  6. Place a second layer of lasagne sheets, the remaining bolognese sauce and the second third of white sauce on top.

  7. Place a third layer of lasagne sheets and the remaining third of white sauce on top. Sprinkle some
    grated cheese
    on top and cook in the oven for 30 minutes.

  8. Allow to rest for 10 minutes before serving.

cauliflower pizza base

Makes 12 small or 2 large
  1. Preheat oven to 200ºC.

  2. Blitz
    500g cauliflower, roughly chopped for 5 sec/speed 4.5. You can also sneak in some broccoli with 400g cauliflower and 100g broccoli if you prefer.

  3. Add
    2 eggs,
    75g buffalo mozzarella cheese, shredded, (or bio cheese for a dairy-free version)
    75g bio cheese, grated (or tasty cheese),
    celtic sea salt and cracked black pepper (optional) and mix 20 sec/speed 4.

  4. Press into pizza base shape on a baking tray lined with baking paper and bake for 30 minutes or until golden brown.

In true toddler fashion, Ella loves the mini versions of these healthy pizza bases without any toppings. To be fair, the mini versions are much firmer and easier to eat. Depending on her mood, she'll have them topped with avocado, my home made chutney or ham and pineapple; but feel free to put anything you like on top.

frittata

Serves 24

A great easy dish to get a decent serve of vegetables into your (or your child's) diet. Whilst this is a Thermomix recipe, a food processor would do exactly the same job.


Poppy cooks...

  1. Preheat oven to 170ºC and either line two small slice trays with baking paper, or oil two pie dishes (or one of each!).

  2. Place
    onion, chopped and
    2 cloves of garlic, peeled in mixing bowl and chop 3 seconds / speed 7.

  3. Scrape down bowl, add
    splash olive oil and saute 2 minutes / varoma / speed 2.

  4. Add
    2 carrots, chopped,
    zucchini, chopped,
    small sweet potato and chop 5 seconds / speed 5.

  5. Add
    400g corn kernels,
    100g bio cheese, grated,
    1 tablespoon wholegrain mustard,
    180g gluten free self raising flour,
    6 eggs,
    1 teaspoon baking powder,
    celtic sea salt and cracked black pepper and mix 20 seconds / reverse / speed 4.

  6. Pour mixture into slice tins or pie dishes.

  7. Sprinkle
    pepitas and
    sunflower seeds over the top.

  8. Place in oven for 50 minutes or until golden brown.

chocolate + date brownies

Serves 20



Poppy bakes...


  1. Preheat oven to 190ºC.

  2. Line slice tray with baking paper.

  3. Break
    160g 70% dark chocolate (I use Loving Earth) into mixing bowl and mill 10seconds / speed 9.

  4. Add
    150g dates (approximately 9-10), pitted and diced into mixing bowl and chop 15 seconds / speed 10. (I find that if I don't dice them, depending on the brand of date, that my thermomix struggles to chop them and ends up heating up the chocolate which makes it very hard to mix together.)

  5. Add
    180g coconut oil and cook 5 minutes / 60ºC / speed 2.

  6. Add
    30g coconut flour
    ,
    4 eggs
    ,
    1/2 teaspoon vanilla extract
    ,
    1/4 teaspoon celtic sea salt
     and mix 20 seconds / speed 8.

  7. Scrape down sides and mix for another 10 seconds / speed 6.

  8. Scrape mixture into slice tray and bake for 15 minutes or until just firm before it burns.

  9. Remove from oven, cool, cut into squares and keep in the fridge.

kedgeree

Serves 6



Poppy cooks...


  1. Soak
    1 cup puy lentils for at least an hour, then drain.

  2. In a saucepan, boil
    4 eggs with
    2 fillets salmon in a steamer insert above. Once the salmon is cooked through, flake; and once the eggs are cooked, cut into quarters; then set all aside.

  3. Saute
    2 onions, sliced to your desired level of caramelisation, then set aside.

  4. Melt
    2 tablespoons coconut oil in a large pan, then add
    1.5 cups basmati rice, lentils,
    2 bay leaves,
    4 garlic cloves, minced,
    knob of ginger, grated,
    sprinkle of chilli powder to your liking,
    1 teaspoon ground turmeric,
    2 teaspoons ground cumin,
    2 teaspoons ground coriander and stir until fragrant.

  5. Add
    3 cups filtered water and bring to the boil then reduce heat to low and cover, cooking until the rice and lentils are done.

  6. Stir through
    bag spinach, then add fish, eggs, onions and
    bunch parsley, chopped.

  7. Serve with a
    wedge of lemon.

flourless chocolate cake

My best critic is my husband; so the fact he likes this cake makes it a winner! It is a variation of the popular Thermomix Magic Bean Cake, but if you don't have a Thermomix, you can do the exact same process with a blender and mixer or food processor. I love how it contains red kidney beans as a flour replacement, but you can't taste them. You can make this cake vegan too by using a flax egg or egg replacer.

Serves 10


CAKE
  1. Preheat oven to 180º and line a cake tin.

  2. Puree
    400g red kidney beans or butter beans, drained and rinsed,
    1 tablespoon water,
    1 egg
    and

    1 teaspoon vanilla extract until smooth on speed 7; then set aside.

  3. Without washing the mixing bowl, beat
    125g butter and
    140g coconut sugar for 30 seconds on speed 5.

  4. Add
    4 eggs and beat for 20 seconds on speed 4.

  5. Add bean mixture back in and combine for 5 seconds on speed 4.

  6. Add
    65g cacao powder,
    1 teaspoon gluten-free baking powder,
    1/2 teaspoon bicarbonate of soda and
    1/4 teaspoon celtic sea salt and blend for 10 seconds on speed 4.

  7. Pour batter into cake tin and bake for 40 minutes or until a skewer comes out clean.

  8. Allow the cake to cool, then remove from tin. You can simply decorate it with
    raspberries
    and
    desiccated
     coconut; and/or serve with a generous dollop of
    coconut ice cream
    .

JAM

To take this cake to the next level, you can add some raspberry jam to cut through the dark chocolate taste.
  1. To make the jam filling, in a small sauce pan heat
    1/2 lemon, juiced,
    1 tablespoon coconut sugar and
    2 teaspoon rice malt syrup.

  2. Once the coconut sugar has dissolved, add
    1 cup raspberries,
    1/2 teaspoon vanilla extract and
    2 tablespoon white chia seeds; gently mashing the raspberries with a fork.

  3. Remove from the heat and cool in the fridge until the chia seeds have absorbed most of the liquid to form a jam.

  4. Slice cooled cake in half and spread the jam between the two layers.


ICING

This is the best healthy chocolate icing! I don't have any pictures yet but I will be making this for my daughter's next birthday cake, so I'll share some pictures soon.
  1. Pour
    150g dark chocolate buttons into a stainless steel mixing bowl over a boiling pot of water and slowly stir with a whisk until melted.

  2. Add
    1 cup coconut cream
    and slowly whisk together until combined.

  3. Cool in the fridge until the right consistency to spread onto the cooled cake.

CHOCOLATE SHELL 

This is another icing option which creates a thinner and harder layer of chocolate around the cake which I use when I make this cake in my Wilton 5 Layer Cake Tin Set.
  1. Melt
    150g dark chocolate and
    3 tablespoons coconut oil in a double boiler, refrigerate for about 20 minutes just before it sets then whisk until fluffy. Pipe or spread over cake - voila
    !

In this picture I have spread the raspberry jam between the 5 layers and encased the cake in the chocolate shell and topped with freeze dried raspberries.

chocolate + avocado mousse cake

Serves 12


Poppy bakes…

  1. Line a cake tin with baking paper.

  2. Mix together
    1 cup gluten free self raising flour,
    3 tablespoons cacao powder and
    1/2 teaspoon celtic sea salt.

  3. Beat in
    2 eggs,
    4 tablespoons coconut oil,
    6 tablespoons maple syrup,
    3 tablespoons rice milk and
    teaspoon vanilla extract.

  4. Pour into cake tin and bake at 185ºC for 25 minutes, then allow to cool to room temperature before placing in the fridge to chill.

  5. Blend
    2 avocados,
    4 tablespoons cacao powder,
    1.5 tablespoons coconut cream,
    6 tablespoons coconut oil,
    4 tablespoons maple syrup and
    tablespoon vanilla extract.

  6. Pour mousse on top of cold cake and set in the fridge.

strawberry muffins

  1. Preheat oven to 180ºC and prepare 12 muffin cups.

  2. In a large mixing bowl combine
    1/2 cup sunflower seed flour,
    1/2 cup brown rice flour,
    1/2 cup coconut flour,
    1/2 cup millet flour
    ,
    1/2 cup gluten-free plain flour,
    2 tablespoons coconut sugar,
    1 tablespoon tapioca flour,
    2 teaspoons baking powder,
    1/2 teaspoon celtic sea salt and
    1/4 teaspoon ground nutmeg.

  3. Add in
    2 eggs, beaten,
    1/4 cup olive oil,
    1/2 cup maple syrup,
    1 tablespoon vanilla extract and slowly beat to combine.

  4. While beating, slowly add in
    1 cup rice milk.

  5. Fold through
    1 punnet strawberries, diced then spoon mixture into muffin cups and bake for 25-30 minutes.

pear cake

  1. Preheat oven to 180º and prepare a cake tin.

  2. In a mixing bowl combine
    250g gluten-free plain flour,
    1/2 teaspoon baking powder and
    pinch of celtic sea salt.

  3. Place
    250g coconut sugar into Thermomix and mill 20 seconds / speed 10.
  4. Insert butterfly whisk; then add
    250g nuttelex 
    and mix 3 minutes / speed 3.

  5. Add
    4 eggs,
    1/4 teaspoon vanilla extract and
    zest of 1/4 lemon on speed 3 until combined.

  6. Pour the wet mixture into the dry, and combine using a spatula.

  7. Gently fold through
    3 packham pears, peeled and diced.

  8. Pour mixture into the cake tin and bake for 50 minutes.

quinoa + blueberry slice

Serves 12

  1. Preheat oven to 180º and line a slice tin with baking paper.

  2. In a mixing bowl combine
    2 cups quinoa flakes,
    1/2 cup brown rice flour,
    1/2 cup fine desiccated coconut,
    2 teaspoon ground cinnamon,
    1 teaspoon gluten-free baking powder and
    1/8 teaspoon celtic sea salt.

  3. In a small saucepan on low heat, melt together
    4 tablespoons coconut oil,
    1/2 cup manuka honey and
    1/3 cup coconut sugar, then add to dry ingredients and combine.

  4. Mix through
    2 free-range eggs and
    2 drops dōTERRA lemon essential oil.

  5. Fold through
    1 cup blueberries, then pour mixture into the slice tin and spread evenly.

  6. Bake for 20-25 minutes or until slightly golden. Allow to cool and then slice.


    I like to store mine in the fridge and heat up in the oven for 5 minutes before eating to make the batch of slices last longer than a few days.

baked eggs in tomato kale

Serves 4



Poppy cooks…
  1. In a large deep frying pan, heat a swig of
    olive oil over medium heat, then add
    onion, diced,
    2 carrots, finely diced,
    celery stick, finely diced and
    3 tablespoons flat-leaf parsley, chopped, stirring frequently until browned.

  2. Stir through
    1 clove of garlic, minced,
    sprig of rosemary and
    2 sprigs thyme for one minute.

  3. Add
    bunch kale, finely chopped and cook until the kale has softened.

  4. Add
    1 tablespoon tomato paste,
    tin of diced tomatoes and
    celtic sea salt + cracked black pepper, to taste, simmering for 8 minutes.

  5. Make four wells and crack
    4 eggs into each of the wells, either covering the pan or placing the pan in the oven until the egg whites are cooked.

mixed berry, carrot + zucchini cupcakes

Makes 12



Poppy bakes…


  1. Heat oven to 190ºC.

  2. In a bowl whisk together
    1 cup coconut sugar,
    1 cup olive oil,
    2 eggs and
    1.5 teaspoons vanilla extract.

  3. Add and whisk together
    3/4 cup carrot, finely grated,
    3/4 cup zucchini, finely grated and
    1 cup fresh or frozen mixed berries.

  4. Add and whisk together
    3/4 teaspoon celtic sea salt, and
    3/4 teaspoon ground cinnamon.

  5. Add
    2 cups gluten free self raising flour and gently fold into mixture without over mixing.

  6. Divide batter among moulds and bake for 25 minutes or until a skewer comes out clean.

egg + beetroot open sandwich

Serves 4

Whenever cooking with beetroot, I like to buy "Love Beets" beetroot which is already cooked and peeled into 250g portions. There are no preservatives, just 100% real beetroot, but it saves a lot of time and mess!

This recipe is great for lunch, or you can use smaller squares of toasted bread to make an interesting canapé when entertaining. You can even ditch the bread all together for a straight up salad.


Speaking of gluten free bread, my favourite so far is Lifestyle Bakery's Soft 'n Light Chia + Quinoa Bread - it is packed full of goodness and super tasty. As the name alludes to, it is light and fluffy unlike many other gluten free breads which are either really dense and strangely sweet in an attempt to disguise the bland taste with sweeteners.

  1. In a medium bowl, combine
    250g beetroot, cooked, peeled and diced,
    5 hard boiled eggs, peeled and chopped,
    zest of 1/2 an orange,
    1 teaspoon ground cumin,
    3 tablespoons Norganic mayonnaise,
    1 tablespoons coriander, chopped and
    1/4 teaspoon celtic sea salt.

  2. Serve on toasted
    gluten free bread.

fake fried rice with fake honey chicken

Serves 4

I was amazed when I first cooked this dish as it immediately reminded me of being a child because it tasted exactly like my mother's cooking. Without compromising on taste, this version of fried rice with sticky honey chicken is so much healthier than the traditional version - you have to try it to believe it!


Poppy cooks…

  1. In a large pot combine
    1/4 cup apple cider vinegar,
    1/4 cup coconut amino sauce,
    2 cloves garlic, minced,
    1.5 teaspoons manuka honey,
    4 black peppercorns and
    2 bay leaves.

  2. Add
    500g chicken thighs to the pot and add enough 
    chicken stock until the chicken is submerged. Place in the fridge to marinade for at least 3 hours.

  3. Whilst the chicken is marinading, cook the fried rice. Begin by scrambling
    4 eggs with a pinch of
    celtic sea salt and pepper, then set aside.

  4. In a wok or large frying pan on high heat, sauté an
    onion, diced,
    4 cloves garlic, minced and
    2 carrots, peeled and diced until onion is golden and carrots are softened, then set aside.

  5. Pulse
    1/2 cauliflower 
    in a food processor until it resembles rice. Then sauté in work with oil until the cauliflower browns slightly.

  6. Add carrot mixture back into the wok, along with
    2 tablespoons coconut amino sauce and
    1/4 teaspoon tamari sauce.

  7. Then add
    1/2 cup frozen peas and stir until peas are cooked, then set aside and keep warm while you cook the chicken.

  8. Place the pot with the marinaded chicken on high heat to bring it to the boil, then reduce to a simmer. Once the chicken is cooked, remove from the pot.

  9. Reduce the remaining sauce until it forms a thick and sticky consistency, then add the chicken back in to heat up before serving.

  10. Just before serving, combine the scrambled egg into the fried rice.

christmas cake

Serves 10

Despite containing no gluten, dairy, refined sugar or nuts, this Christmas cake tastes even better than traditional Christmas cakes. I made a single cake, but you can use the same recipe to make individual single serves using pudding moulds. Depending on your dietary requirements, you can serve with cream, coconut cream, or for added indulgence, white chocolate sauce with cognac & vanilla bean by "a bit on the side" (a local Denmark brand who make THE BEST sauces and preserves which are all gluten free).

  1. Around 12 hours before you plan to bake the cake, soak
    400g currants,
    175g raisins,
    175g sultanas,
    50g dried cherries in 
    4 tablespoons of cognac (you can also use brandy or cherry liquor).

  2. Preheat the oven to 135˚C.

  3. Using an electric mixer with a whisk attachment, cream together
    220g unsalted butter at room temperature and
    220g coconut sugar until light, pale and fluffy (approximately 5 minutes).

  4. Slowly add
    4 lightly beaten eggs whilst using the whisk attachment.

  5. Gently fold in
    200g plain gluten-free flour,
    1/4 teaspoon ground nutmeg and
    1/2 teaspoon ground allspice.

  6. Gently fold in soaked fruits,
    zest of 1 orange,
    zest of 1 lemon and 
    1 tablespoon of molasses.

  7. Pour mixture into cake tin and cover with a circle of baking paper with a small hole cut out of the centre.

  8. Bake towards the bottoms of the oven for 1.5 hours and then cool on a wire rack.

  9. Using a skewer, make small holes in the cake; and once a week (or twice before serving), feed the cake with a drizzle of cognac. Use a basting brush to spread the cognac over the surface for an even colour.

noodle stir fry

Serves 4

  1. Blend
    juice of 1 lime,
    1/4 teaspoon cayenne pepper,
    3/4 teaspoon ground ginger,
    4 tablespoons tamari sauce,
    2 tablespoons apple cider vinegar,
    3 tablespoons manuka honey and
    5 medjool dates, pitted in a food processor until dates are fully broken down and set aside.

  2. In a wok or non-stick frying pan scramble
    4 eggs, whisked with a drop of olive oil and set aside.

  3. In the same wok/pan, heat
    olive oil over medium heat before adding
    500g chicken tenderloins, diced with
    celtic sea salt + cracked black pepper for 3 minutes.

  4. Add
    onion, thinly sliced and
    5 garlic cloves, minced until chicken is fully cooked and onion is browned. Drain any excess liquid.

  5. Stir through
    1 packet of konjac or rice noodles, prepared according to instructions on packet,
    3 baby zucchini, julienned,
    2 carrots, julienned and
    2 spring onions, diagonally sliced tossing until ingredients start to stick to the pan.

  6. Pour sauce over ingredients and stir to combine. Cook until sauce is absorbed/reduced.

  7. Before serving, stir through egg and
    1/2 cup coriander, chopped.

  8. Serve with
    lime wedge and garnish with
    coriander.

Notes
If you like spicy food, just increase the amount of cayenne pepper in the sauce. And if you aren't allergic to nuts like I am, then top this dish with some toasted cashews.

broccoli + zucchini bake

Serves 4


Ingredients
red onion, diced
broccoli, cut into small florets
2 zucchini, sliced
celtic sea salt + cracked black pepper
crushed chilli flakes
hot filtered water
1/2 cup rice milk
4 free-range organic eggs
ground nutmeg
handful basil, chopped



Method
  1. Saute onions in a frying pan with olive oil until softened
  2. Add broccoli and zucchini, season lightly and add a pinch of crushed chilli flakes to taste. Add a dash of hot filtered water to the pan to soften the vegetables, and add more as necessary
  3. In a separate bowl, whisk together milk, eggs, pinch of celtic sea salt and a pinch of ground nutmeg until fluffy
  4. Stir basil through egg mixture
  5. When vegetables are softened and slightly browned, place in a baking dish and pour egg mixture over the top
  6. Bake in a 180°C oven for about 30 minutes



Notes
If you are not following a dairy or lactose free diet, then sprinkle with cheese before placing in the oven.

blueberry, lime + coconut cake


Serves 10


Dry ingredients
1/2 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon coconut sugar
Wet ingredients
4 free-range eggs
3 tablespoons nuttelex, melted
juice + zest of 1 lime
zest of 1/2 lemon
6 tablespoons coconut milk
1 teaspoon vanilla extract
punnet (1/2 cup) blueberries
Glaze ingredients
1/4 tablespoon coconut oil, melted
30ml coconut cream
Pinch of celtic sea salt
25ml honey
15ml lemon juice
1/4 teaspoon vanilla extract


Method
  1. Preheat oven to 180°C
  2. In a bowl combine dry ingredients
  3. In a separate bowl mix wet ingredients, excluding blueberries
  4. Mix dry ingredients into wet ingredients using a spatula
  5. Combine blueberries into mixture
  6. Spoon mixture into a cake tin and bake for 30 minutes, or until a skewer inserted comes out clean
  7. Remove and allow to cool for 10 minutes before serving
  8. On low heat, combine glaze ingredients until smooth
  9. Cool glaze in the fridge for at least 30 minutes before spreading over cake



Notes
This is a delightfully light and fluffy cake, due to the use of coconut flour. Like most cake recipes, you can use this same mixture to make muffins - this recipe makes about 6 large muffins.
