mexican bowl

Serves 4

This dish is so quick and easy, and can all be done using just one pan, so less washing up! Feel free to add jalapeños if you like extra heat, or to omit the chilli powder and cumin like I do when cooking this for my toddler. This is quite a light meal, so great for summer. If you would like to bulk it up, then you can try accompanying it with grilled meat, gluten free flat bread or some sweet potato chips.

Poppy cooks...
  1. Heat
1 tablespoon coconut oil in a large pan and saute
    2 garlic cloves, minced.

  2. Add
    1.25 cups quinoa,
    tin diced tomatoes,
    1.25 cups vegetable stock,
tin black beans, drained and rinsed,
    1.25 cups frozen peas*,
    1/2 teaspoon chilli powder (optional),
    1/2 teaspoon ground cumin (optional),

celtic sea salt and cracker black pepper to taste; bringing to the boil and reducing to a simmer with a lid on until quinoa cooked.

  3. Serve topped with
    avocado,
    lime wedge and
    coriander.
* The more traditional option here is corn, but we are currently eliminating corn from our diet for health reasons. Feel free to google the pros and cons of corn.

quinoa + blueberry slice

Serves 12

This yummy and healthy slice has a hidden ingredient...dōTERRA'S lemon essential oil, which is dōTERRA's top-selling essential oil. Lemon has multiple benefits and uses, being a powerful antioxidant that can help ward off free radicals due to its high limonene content. When ingested, it provides cleansing and digestive benefits, can soothe an irritated throat, and supports healthy respiratory function. Extracted from the lemon rind, a single bottle of dōTERRA lemon essential oil is equal to 45 lemons; with the lemons used in dōTERRA's product sourced in Italy. You can purchase the oil from my online dōTERRA shop at http://www.mydoterra.com/kerryjacobs/

Poppy bakes…

  1. Preheat oven to 180º and line a slice tin with baking paper.

  2. In a mixing bowl combine

    1/2 cup brown rice flour,

I like to store mine in the fridge and heat up in the oven for 5 minutes before eating to make the batch of slices last longer than a few days.

avocado + egg crispibreads

Per serve

Ingredients
Orgran Multigrain Crispibread with Quinoa
egg, boiled and chopped
1/4 avocado, diced
cracked black pepper

Method
The method is, there is no real method! Just pile the ingredients on the Crispibread for a quick snack. Obviously, this is more a concept than a recipe - so feel free to use toasted gluten-free bread, corn crackers, rice crackers or any other type of base. You can smash the avocado instead of dicing it, and add any ingredients you have to hand. I quite like adding dried cranberries for a sweeter version.

The fresh lemon juice really makes this dish pop. If you like chilli, feel free to slice extra red chillies and put on top as a garnish, or you can even try it with coconut yoghurt to counter-balance the hot chilli!

This is a great dish that uses pantry and freezer staples, so is great when you have run out of fresh ingredients and don't have time to go to the markets or shops. AND...it's a one-pot-wonder!!!
